The chorizo is back! This sweet potato & chorizo hash is a delicious recipe that is easy to make. For something a little different yet still highly nutritious, this is a great option.
Sweet potato is packed full of nutrients and a really great food to incorporate into your diet. The chorizo (and eggs if you choose to include them in the recipe) deliver plenty of protein, plus the chorizo will provide a little extra kick of spice. This is an amazing meal to have on a cold night and will be sure to fill you up. A large batch can last a few days so that’s meal prep sorted! What you’ll need to make Sweet Potato & Chorizo Hash:
225g chorizo
600g sweet potato
1 red onion finely sliced
2 x 400g cans of chickpeas
Salt & Pepper for seasoning
4 x eggs (optional)
Method:
– Peel your sweet potatoes and chop them into cubes. Put them in a pan and boil them in water for a few minutes and drain.
– Add some oil to a pan/wok and add in the onions and chorizo, frying for 4-5 minutes.
– Add the sweet potatoes, chickpeas and seasoning and fry everything together for 10-15 minutes until the potatoes begin to go a little crispy.
– Optional: Create 4 wells in the hash and crack 4 eggs into each one. Cover the whole pan with a lid and cook for 2-3 minutes.
– Serve & enjoy!
