Chorizo & Bean Stew: A Delicious Dinnertime Dish

I’m a huge chorizo fan, therefore, any recipe that features it is an automatic success in my eyes. This Chorizo & Bean Stew is no different! I’m all about simple, easy to cook recipes, so this one ticks a lot of boxes.

There isn’t a huge, extensive list of ingredients needed for this recipe, so it makes it a nice and quick to prepare and cook. The chorizo brings the majority of protein, meanwhile the other ingredients combined ensure you’re getting plenty of vitamins and nutritional goodness from this meal.

What you’ll need to make Chorizo & Bean Stew:

1 finely chopped onion

3 x cloves of garlic, crushed

1 x full chorizo, sliced

3 x medium peppers, sliced

2 tsp of paprika

2 x 400g cans of chopped tomatoes

1 x chicken stock cube & 2 litres of hot water

2 x cans of mixed beans

Method:

– Add the onion and garlic to a large pan and cook until softened/browning.

– Then, add the peppers to the pan, frying for another few minutes, and then add the chorizo. Cook until chorizo begins to sizzle and release liquid.

– Next, pour in the beans, add the paprika and stir everything together, simmering for a few minutes.

– Add the chopped tomatoes and the chicken stock cube mixed with the hot water. Bring down to a simmer and leave to cook for 30-45 minutes until the stew has thickened.

– Serve with rice, jacket potato, or whatever else you would like and enjoy!
