Healthy & Tasty Dinnertime Recipe: Couscous Paella

I wasn’t always into cooking. Particularly during university and my placement year I ate a lot of convenience food which was often high in saturated fat and didn’t really offer much nutritional value. However, now I love to cook and one of my favourite meals to make is couscous paella.

Couscous paella is similar to normal paella, except we’re swapping out the rice for couscous to make it a little lighter. I’m obsessed with chorizo and also prawns so this recipe is my dream! When it comes to cooking, I’m all about meals being nutritious, tasty and fairly quick and simple to make. Couscous paella ticks all of those boxes which is why it’s one of my go-to dishes. I definitely recommend you give it a try!

What you’ll need to make Couscous Paella:

400g couscous

450ml of chicken stock

1 tbsp oil

1 large onion

2 cloves of garlic

3 peppers (I usually go for red, green & yellow)

300g of peeled & cooked prawns

300g of chorizo, sliced

A couple of pinches of mixed herbs

Method:

– Put your couscous in a bowl or container and pour over your stock and set aside.

– Heat the oil in a large pan, add the onions and garlic and cook them until soft & brown.

– Add the chorizo and peppers to the pan and cook until softened. Then stir in the prawns and cook for another couple of minutes.

– Add your couscous to the pan and stir in thoroughly, sprinkle your herbs in and stir again.

– Simmer for a couple of minutes, regularly stirring, then plate up!

This recipe is pretty quick to pull together, it’s full of protein and is perfect for meal prep. I usually get at least 3-4 servings out of these ingredients!
