Healthy Lunch Recipe: Stuffed Red Peppers

I used to always find lunchtimes such a struggle. Staring in the cupboards and the fridge desperately seeking inspiration was the norm. Usually I’d end up making a beeline for some instant noodles which are insanely low in nutritional value! However, I’ve long since seen the error of my ways, and now I’m hugely into healthy meal prep for my lunches. I’ll make something on a Monday, and it can keep me going through until Thursday or Friday; ideal when you just need to grab something quick and easy. I’m going to share with you the recipe for one of my absolute favourite batch lunches: stuffed red peppers.

One stuffed red pepper is the perfect lunch. It’s healthy, very filling thanks to the rice, and contains a good amount of protein which is essential if you’re trying to gain muscle. The great thing about this recipe is it’s really simple to make, it doesn’t require any obscure ingredients that you’ll never use again, and one batch can set you up with your lunches for most of the week!

What you’ll need:

4 large red bell peppers

100g long grain rice

2 chicken breasts (cooked & diced)

4tsp tomato chutney

1 can of spicy beans

Dollop of sour cream

Method:

– Boil your rice. When cooked, thoroughly drain and mix in a bowl with your cooked chicken pieces, spicy beans and tomato chutney.

– Slice off the tops of your red peppers and remove all the seeds inside.

– Place the red peppers onto a baking tray and spoon your mixture into each of them.

– Bake in the oven for 20 minutes at 180 degrees Celsius.

– Once ready, remove them from the oven, plate up and add a dollop of sour cream on top and a sprinkling of mixed herbs if you’d like.
