I recently made the decision to give up meat and so I’ve been looking up a lot of veggie recipes. One of my new favourites is Pasta With Broccoli Sauce.
This meal is so quick and simple to make! There’s minimal ingredients which makes it a really great cost-effective option. You can always double up on the ingredients if you want to create a larger batch for meal prep purposes too.

What you’ll need to make Pasta With Broccoli Sauce
1 full broccoli broken into small florets
Penne pasta
6 garlic cloves, crushed
Chilli powder
600ml of vegetable stock
Method:
– Steam the broccoli florets until tender, around 10-15 mins.
– In a separate pan, start to boil the pasta.
– Use a wok or large pan to brown the garlic, then add the steamed broccoli florets, vegetable stock and 1-2 teaspoons of chilli powder.
– Reduce the heat and simmer and start breaking down the broccoli with a spatula. Continue to simmer until the broccoli is totally broken down, the liquid has evaporated and the whole mixture is a thick sauce. This should take around 10-15 mins.
– Once ready, drain the pasta and pour it into the pan of sauce and mix well together.
– Serve and enjoy with parmesan cheese, salt, pepper, chilli flakes – whatever you like!
Remember, carbs are an essential part of a balanced diet, so the pasta ensures you get your fix. Broccoli is super rich in vitamins and minerals and is one of your five a day, and the garlic and chilli add a really tasty kick and bring this whole meal together.
